Italian dining takes a delightful turn in the Queen City of the South, as Cibo, a renowned Italian restaurant, opens its first branch in Cebu at SM Seaside City Cebu. The opening marks a significant expansion for the brand, founded by celebrated Filipino Chef Margarita Araneta Fores.
Cibo, which first opened its doors in Manila in 1997, is the brainchild of Chef Fores, whose culinary journey began in Italy under the mentorship of three Italian signoras. Over the years, her venture has evolved into a modern Italian caffe-paninoteca, capturing the essence of Italian café culture as seen in Milan and Rome.
Reflecting on her journey, Chef Fores shared in an audio-visual presentation, “I had been catering since 1987, building the business for nearly 10 years. In 1997, I was ready to open a restaurant. I wanted to create a simple Italian café in the malls of Metro Manila, embodying the modern Italian café culture I experienced in Rome and Milan. Cibo, meaning ‘food’ in Italian, was born from this vision, offering a simple yet authentic and modern Italian culinary experience.”
The Cibo menu boasts a variety of Italian specialties, including starters, panini, sandwiches, salads, pasta, and pizza. Not to be missed are Margarita’s Mains, an array of signature dishes crafted by Chef Fores herself. The restaurant also offers a selection of sodas, juices, shakes, coffee, and desserts, ensuring a comprehensive Italian dining experience.
Cibo’s arrival in Cebu is anticipated to add a unique flavor to the city’s dining landscape, appealing to both local food enthusiasts and visitors. The new branch is located at the upper ground level, Seaview Wing of SM Seaside City Cebu, inviting patrons to experience authentic Italian cuisine in a modern, vibrant setting.
